The Restaurant Ship Hispaniola is owned and operated by Yardarm Club Ltd., part of the City Cruises Plc group of companies.

COMMIS CHEF

Main Purpose

To contribute to customer satisfaction by playing your part in preparing and serving high quality food in accordance to restaurant standards.

Principal Responsibilities

Assistance to the Head Chef

  1. Preparation of vegetables and sauces
  2. Service of starters and desserts
  3. General day to day cleaning duties
  4. Adherence to Health & Safety Policies

To contribute to the best of your ability to the production of food items

  1. To ensure all dishes are prepared in a timely fashion and to the appropriate agreed standard
  2. To be familiar with the menu of the day and know your responsibilities in accordance with the menu
  3. To ensure excellent food hygiene practice is observed in the entire food chain from storage through to preparation and service.
  4. To ensure HACCP compliance within the kitchen and food beverage outlets
  5. To avoid unnecessary wastage by observing proper control methods
  6. Ensure the kitchen equipment is in working order and report any maintenance issues to the Head Chef

Educational Level/Qualifications Required

  • Certificate in Food Hygiene

Experience/Knowledge

  • Experience working in A la Carte Restaurant
  • Experience working in a busy and demanding environment

Personal skills required for role

  • Must be courteous and focused on providing a consistently high standard of customer service
  • Must be standards driven and detail orientated

RETAIL SALES & CUSTOMER SERVICE MANAGER (City Cruises Piers)

Main Purpose

Manage the retail sales and customer service delivery at all City Cruise pier locations. Ensure that the pier staff are sufficiently trained and managed to deliver the customer experience to meet revenue budget targets and deliver a safe customer service to our customers.

Principal Responsibilities

  • Retail revenue sold at Pier locations network. Sales and revenue for all Pier outlets as measured against budget.
  • Customer service delivery to agreed standards at all pier locations.
  • Management of recording data on time performance of the service against schedule.
  • Management of refunds process at pier locations.
  • All operational matters relating to the day to day running of the pier location including, staff and retail systems.
  • Coordinate regular communication to the head office management team on issues within the pier network. Work and liaise with other managers to resolve as soon as possible.
  • Develop staff within direct team to deliver the required customer experience.
  • Work with other managers to develop regular staff incentives to improve sales. Manage and measure all incentives once in operation.
  • Retail sales revenue against budget (Weekly/Monthly/Annual).
  • Measurement of cancellation revenue/numbers (Weekly/Monthly/Annual).
  • Production of weekly on time performance records for delivery of boat time arrival at pier against schedule. Identify all missed turns.
  • Ticket machines to be in full working operational mode and to be available to customers at all times.
  • To encourage and help staff to up sell ticket sales.
  • To be familiar with all the services within the company and our trade customers for day to day running on the pier locations.
  • To maintain excellent product knowledge, competently answer any customer queries and be able to promote in house products and activities and provide other staff with the same knowledge so that they can competently answer the questions too.
  • On occasion to supervise with the allocation of staff in line with staffing levels and company budgets.
  • Understand and ensure the implementation of the health and safety policy, emergency and fire procedures and when necessary, inform the other staff of the same procedures.
  • To ensure the highest level of customer care is shown at all times by the staff to ensure a clean, comfortable and safe environment for all our customers.
  • To provide information for the customers in a polite and helpful manner both face to face and over the phone.
  • Ensure that all information of a confidential nature gained in the course of duty is not divulged to third parties.
  • An ability to work on your own responsibility, especially when under pressure is important. A pleasant approach, together with a genuine desire to help people is an essential quality.
  • To complete timesheet by midday every Sunday and given to payroll department to process in coordination with the correct procedure.
  • To attended functions, conferences, meetings and training as directed by Head of Fleet Operations.
  • To ensure the procedures for cash reconciliation are carried out correctly and that floats and stock are signed in and out in accordance with company policy and procedures.
  • To ensure that all the piers managers report all deficiencies to you in the maintenance of equipment throughout the pier locations.

Educational Level/Qualifications

  • Educated to GCSE level or equivalent
Experience/Knowledge

Required:

  • Managed a team of 4 on multiple sites
  • Experience working with crowd control
  • A minimum of 12 months experience within Customer Services in a customer facing role

Desirable:

  • Travel & Tourism background
  • Worked in a sales environment

Waiting/bar staff

Working within our restaurant, you will be responsible for providing a superior standard of service to our customers, taking orders, serving at both tables and at the bar. This position will involve the retail of alcoholic beverages. Previous experience in plate waiting is essential, silver service experience a definite advantage.

Kitchen porter

Working within the kitchen team, the role will involve maintaining a clean workplace, clearing surfaces, washing up and some basic food preparation. A CIEH foundation certificate in food hygiene (or equivalent) is an essential pre-requisite for this role.
